Things I love Thursday

The weather around here has been terrible today; like tornadoes, flooding, and apocalyptic rain terrible. But it seems to be slowly coming to a stop, it's almost Friday,  and I have lots of pretty things to share with you this week. So here we go:

I love this! It's so freaking cute. I found it while poking around on Etsy. I'm not actually sure it would be useful for me; I'm not someone who will continually remember to re-fill-out the calendar every month, but I still think it's super adorable. And if you are that organized more power to you.

I love this egg plate. I do not love deviled eggs. The plate reminds me of these old Christmas ornaments we made out of hollowed out egg shells like a hundred years ago. That really makes me smile.

Couch to 5K and Miles for Moffitt


I have a lot of news you guys. First, I signed up for my first 5k. That's right the person who always says why would I pay to run and I don't run, race-walk, jog, etc; I’m participating in Miles for Moffitt. It’s actually a whole series of races, most of which are on May 14. So 3.1 miles…in approximately seven weeks, what the heck did I get myself into.
To get myself ready I’m going to do the Couch to 5K (c25k) program. It’s an interval training program designed to get lazy-asses like me ready to run a 5k in nine weeks. Yes, nine not seven. So I’m already behind. So clearly I need to get my rear in motion. I went to FitNiche after work today to get running shoes. They were super nice; they measured my gait, checked my balance, and how I distribute the pressure in my feet from front to back, then the guy found me a pair of shoes that’s supposed to help correct all my wonky feet/ankle problems.
I downloaded the C25K app to my phone; which was the best thing ever, seriously if you try this program spend the three bucks and download the darn app…it made it so much more bearable. Somehow reading about this week’s workouts I thought it would be easy or at least that I would be easing into this whole running thing. But no, halfway through I seriously thought I was going to die (and I damn near fell of the treadmill…I effing hate treadmills). But I made it through and I’ll do it again tomorrow and if all else fails in seven weeks I will be running for sixty seconds and walking for ninety seconds until I finish 3.1 miles.

Tuesday: Weight Watchers Day

I was so anxious about weigh-in all day today. I'd had  three consecutive weeks of gain before this and then I missed my meeting last week. I really worked hard to stay on plan this week. I'm happy about the loss and happy to finally feel back on track.

Vegetarian Sloppy Joes

I love falling asleep when it’s raining outside. Seriously. It’s like one of my top ten favorite times to sleep. And yes I do have more than ten favorite times to sleep. Oh hush! Anyway, since I was totally lame yesterday and fell asleep early…because of the rain; I’ll post twice today. This is the post I actually meant to share with ya’ll yesterday.
I totally had a moment of nostalgia the other day. One of the local radio stations does “Throwback Sundays” or “Sunday Rewind” I can never remember what they call it, but they play old music from thee early eighties through the mid-2000s. Though I’m not sure “Yeah” by Usher is exactly a throwback…I’m pretty sure I was in college when that was popular. Anyway, last weekend I was running around doing errands listening to the old-school music and they up an played “Tearin’ up My Heart” by *Nsync. I was such a huge *Nsync fan when I was a tweenager. I actually went to see them in concert with one of my really good friends from middle school. My Dad took us and he was such a good sport about the whole thing. Thinking about that brought up a lot of really fun middle school memories and made me super excited to cook this recipe.
I don’t actually remember eating Sloppy Joes in middle school, but eating them now is another thing that reminds me of that time in my life. This is a dressed-up vegetarian version I got from the interwebs.

A few Notes on the Recipe:
* I used pre-chopped onions and peppers; because I am lazy and I hate prep-work
* I ended up added about an additional ½ cup of prepared tomato sauce from a jar I had in my refrigerator and some extra tomato paste, this was to make the Sloppy Joe mixture the consistency I wanted.
* I skipped the yellow mustard and substituted approximately 1 teaspoon of ground mustard (see this post about my dislike of mustard).
* I used I Can’t Believe It’s Not Butter (Light) because it has significantly less WW points than olive oil. If this does not matter to you use, olive oil.


Vegetarian Sloppy Joes
I found this recipe at Post Punk Kitchen. They're awesome go check them out!

1 cup uncooked green lentils
4 cups water
1 tablespoon I Can’t Believe It’s Not Butter (Light)
1 medium yellow onion, diced small
1 green pepper, diced small
2 cloves garlic, minced
3 Tablespoons chili powder
2 teaspoons oregano
1 teaspoon salt
8 oz can tomato sauce
1/4 cup tomato paste
3 tablespoons maple syrup
1 tablespoon yellow mustard (or if you’re me 1 teaspoon ground mustard)

Put the lentils in a pot with the water. Cover and bring to a boil; once boiling, lower heat and simmer until lentils are soft. Approximately 20 minutes. Drain and set aside.

About 10 minutes before the lentils are done boiling, preheat a skillet over medium heat. Sauté the onion and pepper in the I Can’t Believe It’s Not Butter until softened and lightly brown; approximately 9 minutes. Add the garlic and sauté a minute more. 

Add the cooked lentils, the chili powder, oregano and salt and mix. Add the tomato sauce and tomato paste. Cook for about 10 minutes. Add the maple syrup and ground mustard and heat through.

Turn the heat off and let sit for about 10 minutes, so that the flavors can meld, or go ahead and eat immediately if you can’t wait.

Serves: 4 (6 WW Points) – 6 (4 WW points)

Y’all these were so good; spicy and sweet and just sloppy enough. BFFMandy and I ate them with roasted Butternut Squash “french fries” and roasted brussel sprouts, it was a pretty awesome dinner.

Weekend Wrap-up: March 26 & 27

This was a good weekend. I mean all weekends are good, but this one seems like it was one of those really good weekends. I feel like it was both relaxing and productive. I ran a ton of errands, visited with family, had a super fun family dinner at Buca di Beppo, cooked lots of yummy food, and spent some time just relaxing and recharging.

Romantic Comedies

Pretty Woman is on TV tonight. I always forget how much I enjoy this movie; it's funny, intelligent, and romantic and all sorts of dated. Plus Richard Gere and Julia Roberts just sort of sparkle together. When you go back an watch this, it's really hard to think of romantic comedy that's this good.

Yum!

Had a yummy dinner with the girls tonight. We went to The Lime in South Tampa.
The food was pretty good; I had the "Tampanian" a rice bowl with mojo pork, black beans, and plantain chips (Just a tip, get the bowl without the dressing, I ordered mine on the side for health reasons and I'm definitely glad I did). Definitely go here.

I totally forgot to blog last night. I came home from the gym (totally wiped out, bt-dubs) ate dinner, did some other computer stuff, and fell asleep by like 10. Totally lame, I know. Usually I would beat myself up, label my blogging project an epic fail, and scrap the whole darn thing. I know my goal is to actually blog every day for a year, but I don't feel like missing a day is a failure (especially since I didn't skip it on purpose). Plus I'm posting twice today (or maybe that part is just a rationalization).

Stop! It's Pajama Time!

You see what I did there...with the play on MC Hammer. I'm awesome...aaannd moving on.
I saw these super adorable pajamas while I was out shopping at Disney. My mom and I were browsing and looking for gifts when I saw them. It's totally a little kid's set of pajamas, but I wish they'd had them for grown people.

I mean seriously...cupcakes depecting Disney characters, what could be more me? It also totally gives me inspiration to try and make Disney Character cupcakes...we'll see how that goes.

American Honey - Pistachio Cake w/ Honey Vanilla Butter Cream

I really love honey. I’m not one of those people who is all “Umm yeah, I’ll have honey in my tea once every six months” or “Honey on a biscuit sounds like it would be okay.” I seriously love honey; like in an eat it straight from the bottle, people bring me honey as souvenirs, always looking for new recipes to use all the honey in my pantry sort of way. This cake, or rather the frosting for this cake, is right up my alley. I made this for a birthday celebration for a few of my girl friends; we had dinner, drinks, dessert, and a night out on the town.

Pistachio Cake with Vanilla Honey Buttercream

 Cake:
1 cup shelled pistachios (plus 1/3 cup for decorating)
2 1/2 cups cake flour
3/4 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup vegetable shortening
1 3/4 cups sugar
1 tablespoon. vanilla extract
1 large egg
3 large egg whites, at room temperature
1 1/2 cups ice cold water
1/4 tsp. cream of tartar

Make the cake:
1. Preheat the oven to 325° F. Butter three 8-inch round cake pans, line the bottoms with parchment paper and butter the parchment. Dust parchment with flour and knock out excess flour. * I just sprayed my pans with nonstick spray.
2. In the bowl of food processor, pulse the pistachios until they are coarsely chopped. Transfer about 2 tablespoons’ worth of the coarse pistachios to a large bowl. Continue to process the rest of the pistachios until they are almost powdery- but not a superfine dust. Stir the pistachio powder into the reserved coarse pistachios. Sift the flours, baking powder, baking soda and salt, together over the large bowl containing the pistachios mix. Stir to combine.
3. In the bowl of a standing mixer fitted with the paddle attachment, beat the butter and shortening on medium speed until creamy, 3 to 4 minutes. Add the sugar and vanilla and beat until fluffy, about 3 minutes. Scrape down the bowl, add the whole egg, and beat until just combined. Turn the mixture to low. *I used a hand mixer, just start your mixer on its slowest speed and then increase gradually.
4. In a measuring cup, make 1 1/2 cups ice water. Add the flour mixture to the mixer in three parts, alternating with the ice water, beginning and ending with the flour mixture. For each addition, turn the mixer to low to add ingredients, then up to medium speed for a few seconds until incorporated. Scrape down the bowl, and then mix on low speed for a few more seconds.
5. In a medium bowl, whisk the egg whites and cream of tartar until soft peaks form (You can do this by hand. Don’t be intimidated, it should only take 2 to 3 minutes). Do not overbeat. Gently fold the egg whites into the batter.
6. Divide the batter among the prepared pans and smooth the tops. Bake for 40-45 minutes, rotating the pans halfway through the baking time, until a toothpick inserted into the center of the cake comes out clean. Transfer the pans to a wire rack and let cool for 20 minutes. Turn the cakes out onto the rack and let cool completely. Remove the parchment paper.

Honey Vanilla Buttercream:
1 1/2 cups sugar
1/3 cup all-purpose flour
1 1/2 cups whole milk
1/3 cup heavy cream
1 1/2 cups (3 sticks) unsalted butter, soft but cool, cut into small pieces
1 teaspoon pure vanilla extract
3 tablespoon honey  *I actually used close to ¼ cup of honey to achieve the flavor I wanted, just FYI.

Make the honey vanilla buttercream: 
1. In a medium heavy-bottomed saucepan, whisk the sugar and flour together. Add milk and cream and cook over medium heat whisking occasionally, until the mixture comes to a boil and has thickened, about 10 to 15 minutes.
2. Transfer the mixture to the bowl of a standing mixer with paddle attachment. Beat on high speed until cool (this takes at least 7 to 9 minutes of mixing) then add the butter; mix until thoroughly incorporated. Increase the speed to medium-high and beat until frosting is light and fluffy, 1 to 2 minutes. *Again I did this by hand, just be patient, one you add the butter your frosting will change texture dramatically (from smooth and sticky like sweetened condensed milk to fluffier like frosting).
3. Add the vanilla and honey and continue mixing until combined. If the frosting is too soft, put the bowl in the refrigerator to chill slightly, then beat again until it is proper consistency. If the frosting is too firm, set the bow over a pot of simmering water and beat with a wooden spoon until it is the proper consistency.

Assemble the cake: 
1. Place one cake layer on a serving platter. Trim the top to create a flat surface, and evenly spread about 1 1/4 cups frosting on top. Add the next layer, trim and frost it, then add the third layer. Spread a very thin layer of frosting over the sides and top of the cake and put it in the refrigerator for bout 15 minutes to firm up. (This is known as the crumb coating and will help keep loose cake crumbs under control when you frost the outside of the cake.) Spread the sides and top of the cake with the remaining frosting. Garnish the cake with crushed pistachios and refrigerate it for 15 minutes to it firm up before serving.
2. This cake will keep beautifully in a cake saver at room temperature for up to 3 days, if the weather is humidity free. Otherwise, put it in a cake saver and refrigerate it for up to 3 days. Let the cake sit a room temperature for at least 2 hours before serving.

Serves: 12-16
 This cake was really good. The flavors were just fantastic; and the cake and the frosting together...OMG Yum! The cake itself was a little dry; I'm not sure if this is bake error ( I may have over beat my eggs...I'm still not sure) or if using milk in place of the water would help the dryness. Either way I'd definitely make this again.

Irritated with iTunes

I do not think I'm a a morning person, but I also do not sleep in anymore. It doesn't matter how late I'm up or how early  I go to sleep, I am almost always awake by 7:30am on Saturday mornings. It's actually pretty irritating. The point of this is that I was awake ridiculously early this morning, but I wasn't ready to admit defeat and get out of bed yet. Instead of being productive, I stayed in bed and watched a movie on Netflix. The movie itself, Chaos Theory (with Ryan Reynolds), was actually just okay. The music was very good though.
After a little research I found the titles/artists. I was seriously ready to add a few songs to my library, but the few I would have purchased were labeled "Album Only." This has always irritated me to no end. I don't want to be the whole album. I don't want your weird score or the randomly bad indie songs or every same sounding song on the album. If I wanted to buy the whole freaking album I would go to the store and buy the CD (ok... probably not... cause that's extra steps, but I'm ranting). I know there isn't anything I can do about it and ranting doesn't fix it, but I feel better after sharing my frustration.

YouTube: A giant time-sucking void

Youtube is a freaking time-sucking void. I very rarely even go on youtube and when I do I always end up wasting way more time than I have watching ridiculous crap. Other things that fall into the time-sucker category:

Up again this week; almost two and a half pounds. The is more of a gain that can I can blame on water weight. I'm really disappointed in myself. I know this has to do with all the super yummy, but not very good for me food I ate last week (see: Moe's, Pistachio Cake, Alcohol, Fried Chicken and Waffles, BBQ, Mac and Cheese). I know I need to make better choices and I definitely need to get back to tracking. That's my goal for this week; to track everyday.

Spring Cleaning

I spent pretty much all of this evening cleaning upstairs, organizing, and rotating my closet (Hi there spring dresses I've missed you). Now as I'm trying to tell y'all about it...or rather tell a story about it I'm literally typing with my eyes closed because I don't think I can stay awake any longer.

Sunday Funday

I really enjoy Sundays. Whether they're super lazy or fairly productive, I always end the day feeling pretty relaxed. Today was one of those quasi-productive Sundays. I ran errands this morning; though they weren't especially successful. Then I went to Downtown Disney with my family for some shopping. I finally saw 127 Hours; I'd definitely recommend it (it was a little slow, but very well acted). Then a family BBQ and the drive back to Tampa.

Re-Seeing

I went to the Magic Kingdom this afternoon. This is not an unusual occurrence in fact it's something I've been doing with my family for as long as I can remember. Today, we went with my Dad's cousins Dan and Diane who are visiting from Pittsburgh. It was a lot of fun (Disney always is), but it was also sort of enlightening. I feel like I often take the awesomeness of the Magic Kingdom. It's great spending time out at Disney with people who aren't as "used to" the park. It helps me to stop, take a moment, and remind myself what most people see when they're at Disney.

Things I Love Thursday

Happy Friday Eve Y'all! It's almost Happy Friday and I'm squeaking this post in at the last minute. Since it's late, and I'm getting up early to frost cupcakes in the AM, I'll just go ahead and jump right into the things I'm enjoying
 this week.

1. I found this super adorable bracelet while I was time-wasting on Etsy the other day. I love bracelets, mostly because I don't wear a lot of necklaces (stuff around my neck weirds me out). And this bracelet is pretty much perfect for me; it's vintage-esque and charming and not especially bling-tastic.
2. Family Time. My Dad's cousins Dan and Diane (so...my second cousins one removed?) are coming to visit this weekend so I'm headed over to my parent's on Saturday morning for super-fun family time. I'm excited. Also I mentioned to my Mom Tuesday that I really wanted pancakes for dinner, but that I was going to be good and have turkey meatloaf and salad instead. Then today I was talking to my Dad and he was buying stuff to make pancakes for b-fast on Sunday (awesomeness!)
3. Girls Night. I have been baking up a storm in preparation for time with the girl tomorrow. Currently there are two dozen chocolate-strawberry cupcakes in my fridge (the ones I need to frost tomorrow in the morning) and a pistachio cake with honey vanilla frosting.

4. Aprons. Speaking of baking I don't know how many of you know this, but I have quite the collection of aprons. Most of them live in my Mom's totallygigantic pantry and I have one here that was a present from when my parents went to Vancouver a few years ago. This apron is another Etsy, time-wasting find and I just think it would be super fun and j'adorable to wear this apron and bake cupcakes.

Dream, Dream, Dream

I had the strangest dream last night. I don't really remember it now (I should really write these things down in the morning), but I remember thinking it didn't make much sense when I woke up. I vaguely remember something about a tattoo and a guy from high school (but I can't remember who) and a girl who I'm pretty sure I knew from college, but who told me we went to high school together. It was very strange...

On a side note I started making a pistachio cake. I've never made it before, but the reviews are pretty good.

Working out my workout

I made it back to the gym tonight after skipping Sunday. I'd like to just say that I effing hate going to the gym; it's hot and loud and I'm not especially a fan of sweating. I'm going though, because I know I need to. I mostly do the elliptical machine (and occasionally the stationary bike), I made it 1.5 miles tonight. This isn't as far as Saturday, but I'm pretty sure I pulled a muscle in my shoulder Saturday so...
Anyway, I'm still working out a way to help myself hate the gym less; Saturday I listened to a mix of rock, pop, and dance music, but I'm open to other suggestions, and tonight I watched part of When Harry Met Sally on my iphone. I definitely moved more quickly with the music, but I hated less and thus stayed longer with the movie. I'll probably settle into a routine pretty soon (I hope!).

Tax Man Max

I went to visit my parents this afternoon and I did my taxes today, well actually my Dad did them for me (thanks, Dad!). It was fairly quick and uneventful, but I was googling around tonight looking for a blog title so I could tell you about doing my taxes and I ran across this old Schoolhouse Rock video. It isn't one I remember from when I was a kid, like Conjunction Junction, The Preamble, or Figure Eight, but it's cure and it definitely gets the point about taxes across in a kid-friendly way.

After watching the video, I couldn't help but thinking to myself how complicated our tax system has become in the last few years. Now this isn't a political commentary (I will rarely talk about my politics here), it's just an observation on how are tax system has changed since this was produced; likely sometime between the mid-eighties and early nineties. I'm not entirely sure that there's an overall point in this anywhere, I just thought I'd share.

A good sort of tired...

I feel like I had a fun and fairly productive day. Today was the monthly Fresh Market @ Wiregrass Mall. This is only the second time I've been, but I really enjoy it and I always come home with really good produce. This week I got grapes, mushrooms, and a cabbage. Then I ran some errands including stopping at Barnes & Noble to check out some vegetarian cookbooks and to read for a while. I also put together this week's menu and grocery list. Then I went to the gym (two and a quarter miles on the elliptical, yay!). I also have almost all my laundry done. This is the kind of tired I enjoy.

The World's Pickiest Eater...

I am a picky eater. I had a friend in college who used to say she was keeping a list of all the foods I don't eat to give to my future husband. At one point she told be the list was a page and a half long...although I'm pretty sure she was joking.
Don't let my yapping about being picky fool you though, I am an eater. I love to eat (not like you couldn't tell that given how much I talk about food here). There are plenty of foods I do love to eat and plenty of the foods I love to eat are things other people think are weird. Let me tell you about all the foods I absolutely adore:
Honey
Butternut squash
Goat cheese
Fish
Scallops
Sardines/Anchovies
Octopus
Ok…really all seafood
Lamb
Nuts (all varieties)
Strawberries
Blackberries
Mangoes
Greek yogurt
Cinnamon (I know this is a spice not a food, but I love it)
Pasta (all varieties)
Feta
Tomatoes
Olives (all varieties)
Broccoli (I could eat broccoli everyday)
Peas
This is just a small sample of all the things I love to eat. I actually omitted the boring things like plain chicken breasts, rice, potatoes, and most of the vegetables.
Now let's talk about the things I don't eat:
1. Cauliflower. I love broccoli, but I think cauliflower is absolutely revolting. It's something about the texture and the lack of taste. It's just gross. 
2. Green Bell Pepper. I will eat these, but I don't especially like them. I prefer the sweeter taste of the Red and Yellow Peppers. 
3. Maple Syrup. I have never liked maple syrup, I usually eat my pancakes and waffles either plain, with peanut butter, or with a fruit-based syrup. (Side Note: I have learned in the last few years that it's actually the imitation maple syrups I dislike. I am learning to like the more subtle flavor of real maple syrup.)
4. Crawfish. I know I said I like all seafood, but I don't really think of crawfish as seafood. My aversion to crawfish is partially related to the fact that you have to pull their heads off to eat them and that TOTALLY WEIRDS ME OUT!!!! And part of my aversion is that I think Crawfish taste like dirt and grit. 
5. Oysters. See above, minus the pulling the heads off bit. 
6. Raw onion. 
7. Spicy food. StupidHot is not a flavor. Period.
8. Buffalo flavored anything. I just don't like the way it tastes, even when it isn't too spicy. 
9. Bleu Cheese. Eating mold weirds me out and I just don't like how it tastes.  
This last one is the only one I absolutely will not eat. Ever. Period. I would eat (or pretend to eat) the above foods, especially if someone served them to me at their home. But I will not eat:
10. Mustard. I am totally grossed out by all variations of mustard. The flavor, the color, the smell, all of it makes me nauseous and I usually feel like I'm going to be sick.
 I'm not sure I'm actually the world's pickiest eater, but I am definitely picky about the weirdest things. But somehow I still manage to eat a lot of really good food.

Things I Love Thursday

It's Friday Eve and I could not be happier. This is definitely one of those week were I've been ready for the weekend since Tuesday. It's just been one of those crazy weeks at work and I'm PMS-y so everything is one hundred times more dramatic. At least I'm self-aware, right?
Anyway, it's time for Things I love Thursday. Woohoo!!! So here's what I'm loving this week:
1. Lucie Lu. Plus-Size vintage inspired clothes. Y'all I'm so excited about this. I love looking in stores like Anthropologie and ModCloth (one of my weight-loss goals is actually to be able to shop in stores like that), but since the biggest size Anthropologie sells is a 14 I'm SOL. This online store seems like a good alternative while I'm losing weight.
2. American Idol. I'm loving AI this year; I totally love Steven Tyler as a judge and J. Lo is surprisingly constructive.
3. I wore heels to work this week. I'm so happy that I'm finally able to wear real shoes to work (instead of sneakers) at least a few days a week.

A case of the blahs...

I'm not feeling well tonight; I have a headache and I'm feeling very PMS-y (grouchy and irritable, mostly at myself). I'm going to bed early in hopes that a little extra sleep will improve my mood.

Tuesday: Weight Watchers Day

Starting Weight: 247.4
Weight Last Week: 235.6
Weight This Week: 233.8

I lost 1.8 pounds this week. Yay!!
Pros: I'm definitely learning to make better choices especially when eating out. I chose grilled chicken and broccoli at Carrabba's on Saturday instead of the heaping bowl of carbs.
Cons: I'm still stress/emotional eating. I know that I'm doing it, I know why I'm doing it, but when I'm overly stressed or upset eating is my coping mechanism of choice.
On the overall plus side, I'm down 13.6 pounds which is just over 5% of my starting weight. Hopefully I'll be able to continue making good choices and eventually learn some new ways of coping that don't involve eating.
